This Easy Homemade Paleo Chocolate is so delicious and so simple to make. Four ingredients and a few minutes is all it takes.
This chocolate was made specifically for my sister. She loves chocolate, like love loves it, but she wasn't loving all the weird ingredients in the store bought ones or the price of the "healthier" ones. I knew it had to be simple to make, so I tried and it has become her favorite! The first batch was a test for sweetness, then I did some adjusting and now it's perfect. These are sweetened just the right amount if you like dark chocolate. If you like your chocolate a little sweeter then use a little more honey.
I just love the size of the hearts. A few are perfect for a craving. These are dairy free, soy free, naturally sweetened and everything in them is good for you. You can feel good eating these delicious treats. The hearts in the above picture are coconut which is why you can see the little specs. The other flavors are smoother.
Simple and Healthy Chocolate
I'm not claiming to be a health expert, but here are some health benefits of the ingredients.
- Cacao powder: this is not the same as cocoa powder. Cacao is full of vitamins, minerals, fiber, and antioxidants.
- Coconut oil- strengthens immune system, helps prevent wrinkles, improves bone health, rich in lauric acid that helps maintain blood sugar and cholesterol levels, and helps heal infections. (Many other benefits not listed)
- Honey- alleviates allergies, cough suppressant, and is a sleep aid.
Make them once and you'll be hooked. You can play around with flavors, adjust the sweetness, and make fun shapes.
They do need to be stored in the fridge or freezer because they melt at room temperature. Once they're hard, I just pop them into a container and keep them in the freezer. It works perfect.
Here are the molds I used for the hearts. They're my favorite and one batch fills both molds perfectly.
I also got a letter mold and I had a little fun playing with them. 🙂

Easy Paleo Chocolate
Ingredients
- ½ cup coconut oil measured as liquid
- ½ cup cacao powder
- 2 tablespoons honey more if you like sweeter chocolate
- ⅛ teaspoon salt
ADD INS
- ¼ teaspoon mint extract OR
- ½ cup unsweetened shredded coconut
- 2 tablespoons instant coffee
Instructions
- Place coconut oil, cacao powder, and honey in a sauce pan and heat over medium heat until combined. Use a whisk to make sure all lumps are gone.
- Remove from heat and stir in any additions.
- Once smooth, pour into molds or onto a tray and place in the freezer for at least an hour to harden.
- Remove from molds and store in the freezer. They will melt at room temperature because of the coconut oil.

If you are trying to make a vegan version you can use real maple syrup instead of honey. However if you are trying to make yet sugar free you may want to experiment with stevia.

Can carob powder be substituted?

Hi Nichole, that should work, but it won't be as chocolatey. Carob powder has a much more mild chocolate flavor and isn't as strong. I hope you try it- let me know how it comes out!

Hi Kay, that's a tough one! My first recommendation would be a good quality lard, like Fat Works, I know it sounds weird but I'm thinking it would be delicious. After that I would say ghee if you can handle it. I'm not sure how olive oil or avocado oil would be. I'm sorry- I'm not sure if that helped. You can use any solid-at-room-temp oil. That would include coconut oil, butter, lard, cocoa butter etc.
Just keep in mind this will alter the taste and slightly alter the texture. (Personally I love using cocoa butter)

Hi I definitely did something wrong! I think I have the wrong cacao.. I couldnt find powder so I grabbed "nips" and they were not melting at all. what ingredients did you use exactly and where do I find them??

You can probably find it at the health food store as well. Don't throw those nibs away though, add some to the chocolate and it makes it like a Crunch Bar!! 🙂

Made these the other day, doubled the honey amount, and when it was all melted together it tasted super delicious! Almost a bit too sweet. Then once they were frozen, it was so so bitter and not sweet at all. I'm not a huge fan of dark chocolate, but even this was way more bitter than that. I'm not sure what I did wrong? Next time I try I'll increase honey again, but I already had doubled it in the first place...

Hi Haleigh! That is so weird- I don't know why that would be!! As written, they are definitely not too sweet. I guess try increasing the honey again and maybe try placing them in the fridge. I don't think that would make a difference, but it can't hurt to try. I'm sorry and I hope you try them again!!

I made these for a quick dessert for later and I don't know what happened one minute the mixture was fine then it turned chucky and very dark brown. I am so confused and don't know what happened

Hi Sophie- I'm so sorry that happened!! It sounds like you burned it possibly?? As soon as the mixture is smooth and combined- take it off the heat. It doesn't even take a minute. Did I do something wrong?? I followed the ingredients but the taste was so bitter and strong it was inedible. It's not just a case of personal taste either. Honestly, no one would eat these. Can you over Cook cacao powder? x

Oh no! I'm so sorry, Becky! I'm not sure why that happened. I make these every week and haven't had that issue. I would definitely increase the honey next time and see if that helps. I don't know if you can over cook cacao- did you boil it? It doesn't even need that. It just needs to be warmed enough to be combined with the coconut oil. I'm sorry it didn't turn out- I hope you try it again.

I love these, sooooo good! Thanks for posting 🙂 I just want to say the first time I made these they were perfect, the second time, everything separated (honey sunk in the molds, coconut oil left on top), so that's probably how you got the bitter, inedible results. So, just be careful to really mix it up & keep stirring up until you pour into the molds. That's my guess at what happened.

Thanks, Ashley! Are you talking about cacao nibs? Unfortunately that wont work because those don't melt. I tried it 🙁 You can add couple tablespoons of those though and make it crunchy. Sorry about that, I hope you try the chocolate. You will love it!!
