This Paleo Meatloaf has so much flavor and is super simple to make. Classic comfort food made healthier. Gluten free, dairy free, and Whole30.
I am a total meatloaf lover! I'm not sure why it gets such a bad rep. Maybe people are making it super bland and dry- that's my guess. Well, that's not what you'll get with this meatloaf. It is moist, flavorful, and even has a hidden veggies! You won't miss the bread crumbs or artificially ingredients.
Here's the ingredients you'll need. If you couldn't tell by now, I love those coconut aminos. I used to use Worcestershire sauce in meatloaf and that takes the place of it now.
Since it's a pretty big loaf, it takes about an hour and a half to fully cook. I'm thinking you could make mini loafs or muffins with it to cut down on cooking time. I highly recommend a meat thermometer to temp it towards the end. You want it between 160°-165°. It will continue to cook a little after you take it out. Here's the one I have. I've had it for 4 years and use it all the time.
Speaking of meat thermometers- my husband was pretty sick a few weeks ago and stayed home from work. I called him on my way home to see how he was feeling and he told me he was concerned he had a fever, but he wasn't sure because the meat thermometer didn't give an accurate reading. Yes, you read that right. He tried taking his temperature with a meat thermometer!! I had a pretty good laugh. Needless to say, I stopped at Target on the way home to pick him up a real, human thermometer.
This Paleo Meatloaf is the perfectly savory with a touch of sweetness. I caramelize the onions, which is an optional step, but adds great depth of flavor. You will love it because it's tasty, healthy, and easy. Great served over cauliflower rice or mash.

Paleo Meatloaf
Ingredients
- 2 pounds ground beef
- 1 large onion, diced
- 1 cup cooked sweet potato
- 1 cup almond flour
- 2 tablespoons coconut flour
- 1 large egg, room temp is best
- 1 cup Paleo ketchup
- 3 tablespoons coconut aminos
- 2 teaspoons salt
- 1 teaspoon garlic powder
Glaze
- ½ cup paleo ketchup
- 2 tablespoons coconut aminos
- 1 tablespoon honey leave out for Whole30
Instructions
- Preheat the oven to 350° and line a cookie sheet or roasting pan with a piece of parchment paper.
- This is an optional step: Place diced onion and a little coconut oil in a pan and sauté until softened and translucent. About 5-7min.
- In a large bowl, mix beef, onion, sweet potato, almond flour, coconut flour, egg, ketchup, coconut aminos, salt, and garlic powder together. I find the best way to do this is with my hands. Mix until just combined- don't overtax or it can become tough.
- Form into a loaf shape and place in pan.
- Mix glaze ingredients in a small bowl and scoop on top of meatloaf.
- Bake for 60 minutes and remove from oven. Carefully scoop out all grease into a jar or bowl.
- Place back in oven for 30 min or until a thermometer reads 160°-165°.

It fell apart for me. It definitely tasted different than “normal” meatloaf, but I️ didn’t mind after a few bites. It’s sort of like when you pick up your glass of milk only to realize it is actually orange juice. Your tastebuds kind of go “ahhhh!” after that, but as you keep drininking, or eating in this case, I️ found it quite tasty. My 4 year old and husband (to their credit) tried a bite of this different looking meatloaf… But ultimately they resorted to leftovers. I think it was the sweet potato the den them in.
In my opinion, the flavors were all there. But the texture was off. This was my own fault because I thought it called for one cup of almond flour and one cup of coconut flour, but I was reading incorrectly so I then had to compensate by adding extra ketchup and two more eggs in order to get it back to a regular meatloaf consistency.
I am new to Paleo eating… Did you use a homemade Paleo catch up? If so, do you have a recipe?

Hi Kelsey- thank you for trying my recipe! I'm sorry it didn't turn out perfect. Yes, coconut flour is a tricky one because it's so dry. It sounds like it sucked up all the moisture, even with the added ketchup. Hi. After making your super delcious ketchup, i am excited to make this meatloaf. One question - is the coconut flour necessary? Could I sub two additional tbsp of almond flour? Thanks!

Meatloaf was amazing! Full of flavor, moist, and your paleo ketchup was a nice touch! I loved the addition of sweet potatoes in it- I usually always serve a side of some form of sweet potatoes with meatloaf so the fact it was added makes it one less step to worry about lol. Thanks for your recipe!

I can't do eggs so would and egg substitute (flax or gelatin egg) work for this?

Hi Holly! I definitely think that would work. I'm not familiar with a flax or gelatin egg, but I've heard great things about both. I know Americas Test Kitchen used gelatin in their meatloaf to help bind it- so maybe that one?? Let me know if you try it and how it comes out. Good luck! 🙂

Hey Stephanie! You could use more coconut flour, but you won't need 1 cup- maybe try about 1/4 cup (not including the 2 tablespoons called for). I don't know for sure the exact amount because I haven't tried it. If you're not strict paleo, parmesan cheese also works. I hope that helps and I hope you try it!
