In a medium bowl, combine the peanut butter, pumpkin, maple syrup and coconut oil and stir well. Add in the oats, pumpkin pie spice, salt, and cranberries and stir well until combined. Place in the fridge for one hour to set.
Remove from fridge and scoop into 1 tablespoon balls, rolling in your palms to form a ball. Place in a container and store covered in the fridge for up to 2 weeks.
